GDL is a food additive used as a sequestrant an acidifier or a curing pickling or leavening agent. It is a lactone of d-gluconic acid. La Casa's GDL is pure white odorless crystalline powder. 300 gram per pack gluconolactone that is used for making soft tofu is enough to coagulate 200 liters of soy milk. Perfect for making Tofu Flower or Tofu from hot soy milk (such as the soy milk made using automatic soy milk makers). Better than nigari becase of no bitter taste and much high coagulation efficiency. Can be used as leavening agent too. The best companion for an automatic soy milk.
